Observation: Most racks in kitchen and coolers are rusting. Must resurface or replace to prevent rust buildup.

Observation: Caulk the wall behind the following sinks: 1) hand sink at front 2) hand sink in kitchen 3) food prep sink in kitchen. Must provide smooth and easy cleanable surface.

Observation: Observed one cracked container lid in kitchen. Must keep all utensils in good condition. Replace.
- Sanitization methods - hot water, chemical
Observation: Sanitizer dispenser is not working properly. The QA concentration is lower than 200ppm. Call for service. Fix.

Observation: Used mop was stored in mop bucket. Must put on hood to allow to air dry in between uses. Corrected at time of inspection.

Observation: 1) Food debris build up on the top section of prep cooler at front. 2) Large bulk storage bins in kitchen are not clean to touch. Clean more frequently to prevent contamination.

- Drying mops
Mops were observed with head bunched up in bucket. Must provide a hook for mop or drape over bucket to allwo to air dry in between uses. REPEAT VIOLATION.

1) Shelving in reach-in cooler on service line is rusting. Must resurface or replace to prevent rust buildup. 2) Food debirs buildup in walk-in cooler. Clean as needed. 3) Racks abover 3 compartment sink and shelving next to 3 compartment sink have dust buildup. Must clean more frequently to prevent contamination.

Backflow prevention device on mop sink has a leak. Must repair or replace to maintain in good condition. REPEAT VIOLATION.

1) Observed several food containers were not covered in kitchen. Must cover food items when not in immediate use to prevent contamination. 2) Started to shaw meat in standing cold water. Must either keep water running slowly over produce or thaw in cooler.
