    Observation: Mop was being stored in mop bucket. In between uses mops must be air dried or draped over mop bucket.
  • Equipment location, installation, repair, and adjustment
    Observation: Walk in freezer door was not self closing. Door must be self closing/latching and maintained in good repair. Repair so door is self closing.
  • Handwashing signage
    Observation: Handwashing sink in front of house missing handwashing sign. Provide handwashing sign informing employees to wash their hands.
  • Storage and maintenance of wet and dry wiping cloths
    Observation: Wet wiping cloth laying on counter near handwashing sink. All wet wiping cloths must be stored in sanitizer between uses.
  • In-use utensils, between-use storage
    Observation: Spatula used for food service on front of house line stored in dipper well. Dipper well was turned off due to leak. Establishment is going to store in water heated to 135*F instead. In use utensils stored in water must be stored in continuous stream of water or in water at a temperature of 135*F or above.

    1) Ice machine has some buildup on chute edge, must empty, wash, rinse, sanitize and let air dry before refill. This should be done monthly or more frequently if buildup persists. 2) Has wet cloth stabilizing cutting board, replace with rubber mat they have for this prupose.

    Has two boxes of food gloves stored underneath chemicals on chemical area rack, move gloves to food storage area not directly under or adjacent to chemicals. Corrected on site.
