    Observation:Anyone working with food or clean equipment must wear hair restraint such as net, visor, or hat, none worn today.

    Observation:1) Meat slicer has some buildup under the blade and carriage, clean more thoroughly. 2)Dipper well for ice cream, not on, no sales yet today, but has buildup around drain base, must clean and sanitizer before usage.

    Observation:All lights in prep/warewashing area and front counter prep area appear to be glass without protective shield or coating, provide protection to prevent glass shattering.

    Observation:Light still very dim in prep/warewashing room, provide more overhead lighting or brighter spot light intensity to illuminate room for cleaning.
  • Mechanical ventilation
    Observation:No mechanical ventilation noted in either RR, must provide to help vent odors.

    Observation:Wallboard behind top of pizza ovens is getting gouged by the pizza paddles, must resurface this area to have smooth, durable, cleanable surface to protect the pizza paddle and be cleanable of food particles.
