Observation:Wallboard behind top of pizza ovens is getting gouged by the pizza paddles, must resurface this area to have smooth, durable, cleanable surface to protect the pizza paddle and be cleanable of food particles.

Observation:Has pizza paddles stored on top of pizza ovens, must provide a cleanable surface, such as tray, to store on to protect from top if oven.

1) Meat slicer has some dried cheese particles along base of blade area, clean more thoroughly. 2) Upper oven of one of the two Bakers's Pride ovens has both stones broken, must replace stones before use this compartment. 3) Using sponges on food contact surfaces, sponges not allowed on food contact surfaces, use cloth instead, may use scouring surface only but follow with cloth. 4) Clean mixer head underside, food particles buildup. 5) Has ice cream scoops stored in standing water, must provide a running dipper well for ice cream scoops. 6) Using round cup as scoop in flour, provide a utensil with a handle and keep inverted out of product. 7) Has single use knives and forks not presented with handles inverted to protect the mouthpiece, food contact surfaces, corrected now. 8) Has case of lids stored on floor in ice cream area, store at least 6 inches off floor.
