Failure to maintain fixtures in repair sufficient to prevent food from becoming adulterated. Specifically, we observed that a plastic light cover in the walk-in cooler was cracked, and damaged. The light fixture, and damaged light cover, are located over closed containers of food and food ingredients.
- Shown to be effective
The procedure used for cleaning and sanitizing of equipment has not been shown to provide adequate cleaning and sanitizing treatment. Specifically, on December 17, 2015, we observed during a production change over that employees sprayed quaternary sanitizer onto the stainless steel sandwich assembly tables after making Summer Sausage Stacker sandwiches and just prior to assembling Buffalo Chicken Sub with Ranch and Cheese Sandwiches. We observed that the table tops were not cleaned, but were only treated with the quaternary sanitizer solution. In addition, the quaternary sanitizer solution was applied to the table tops with a plastic spray bottle and the solution was almost immediately wiped from the table top. The sanitizer was not permitted to remain in contact with the table tops for the specified period of time as indicated on the manufacturer’s label and instructions for use.
- Not washed/sanitized when appropriate
Employees did not wash hands thoroughly in an adequate hand-washing facility after each absence from the work station. Specifically, we observed approximately six food employees returning from break. The employees went directly to their sandwich assembly stations without washing their hands prior to returning to work. The firm’s production manager was notified of this observation and a request for an immediate intervention was made. The production manager directed employees to wash their hands and we observed employees then wash their hands. Corrected-on-site.
- Cleaning and sanitizing operations
Failure to conduct cleaning and sanitizing operations for utensils and equipment in a manner that protects against contamination of food and food-contact surfaces. Specifically, we observed employees cleaning sandwich assembly table tops with Member’s Mark Disinfecting Wipes. We observed that employees would wipe food contact surfaces with the wipes, then proceed with assembling of sandwiches on the table top surfaces. The manufacturer’s labelling instructions for the disinfecting wipes states that food contact surfaces must be rinsed with clean, potable water after disinfecting. We did not observe food contact surfaces being rinsed with clean, potable water after use of the disinfecting wipes and before assembling sandwiches.
