    Observation: Dipping cheese holding at 120F. Dipping cheese reheated to 165F and returned to hot holding unit.

    Observation: Ice scoop stored on top of ice machine.

    Observation: Inside of ice machine has build up. Ice is visibly contaminated. Staff started to clean machine at time of inspection.

    Observation: Dipping cheese not reheated properly prior to holding. Staff reheated cheese dip to 165F for hot holding in the steam table unit.

    Observation: Au jus in the walk in cooler cooling with celephane wrap covering it.

    Observation: Prep cooler on cook line missing the thermometer. Staff able to find and place a thermometer in unit.

    Observation: Walk in cooler ambient temp at 50F, food temping at 45F. Large beer delivery prior to inspection had the door of the unit open for a long time. Food was placed on ice and the temperature of the unit was decreased to increase recovery time. Potato balls in prep line cooler holding at 43F. Unit temp adjusted to increase recovery time. Potato balls holding at 41F at end of inspection.
