    Observation: The HACCP Plan references the facility will keep temperature logs for the cooler and receiving temperatures. The facility has not started to keep a temperature logs.
  • Certified Food Protection Manager with management and supervisory responsibility employed by the establishment
    Observation: The facility does not have a CFPM.
  • Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days
    Observation: Packaged deli salads in the customer reach-in cooler held longer than 7 days. Corrected by voluntarily discarding the salads.
  • Physical facilities maintained in good repair
    Observation: Ceiling in the back room in poor repair.
  • Package integrity
    Observation: Dented cans on the customer reach-in shelves. Corrected by removing all the dented cans and placing them in their can return area. The owner is going to train the new employees in this area.
