    Datemarking shall not exceed 7 days past the preparation date. If freezing- put new date when it is taken out of freezer. Old date stickers shall be removed from containers prior to washing. Meat balls had a date 9/11, Sausage had a date 10/9 and 10/10 (previously frozen and taken out of freezer)

    Hands shall be washed with soap and dried after handling raw meats and before putting on gloves. Hands were rinsed with water after handling raw pork. Corrected at time of inspection.
