Observation: Always have a sanitizer bucket in work areas. Keep rags in bucket.
- A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
Observation: Will order thin tip thermometers.
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: Cut apples and cut pineapple out of temp. Apples were 62 degrees and pineapple 52 degrees on salad bar area.

Observation: Open cans of pop. All drinks need to be covered and stored in non food prep area.
