Sanitization methods - hot water, chemical Observation: Chemical sanitizing dish machine is testing low, 0 ppm. Employee observed washing blenders and utensils in the two bay sink using only soap and waster. Dishes must be washed, rinsed, and sanitized. Establishment only has a two compartment sink for ware washing. Inspector set up a tub with a chlorine solution for the dishes to be sanitized in. Dish machine may not be used until serviced. Sanitizer solution will need to be set up in the tub on the counter to complete the three step process of wash, rinse, sanitize.
