    Observation: Cases of food stored on the floor of the freezer.
  • Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
    Observation: Prep cooler on line does not have an ambient air temperature thermometer.
  • Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
    Observation: Large accumulation of dust one the light fixture/ceiling near the ware washing area.

    Observation: Ceiling vent in front of the walk in cooler has a large amount of dust accumulation on it.

    Observation: Clean utensils are exposed to splash from the power soak agitator at the warewashing sink. Adjustments made to move utensils out of splash area.
