Observation: Cooked chicken and sausage prepared day prior to inspection did not have a date mark. Person in charge date marked product with date of preparation.

Observation: deli slicer had residue build up on grooved plate that holds food product in place to slice.

Observation: Establishment is using time to monitor their pizza temperature control and did not have written procedures. Establishment stated they will write a written procedure and mark the time pizza was removed from oven. Establishment has decided to use rice balls, calzones, and rolls as a display in the case. Employee will take product from refrigeration as needed.
- Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
Observation: Raw shell eggs stored above sauces. Person in charge removed eggs to be stored above chicken and ground beef.
- Foods are cooled using appropriate methods
Observation: Sauces between 86-90F* stored covered in walk-in-cooler. Sauces were made in the morning. Person removed sauces to be cooled in an ice bath at the three compartment sink.
