Observation: Observed staff use common cloth towel to dry hands. He rewashed and dried with paper towels.

Observation:Paper towels are not located by handsinks. At both locations they are above prep areas. Move paper towels by handsinks.
- Manual warewashing sinks requirements
Observation:Since last inspection-the three compartment sink was removed and a two compartment with a drain board was put in place. The facility needs a three compartment sink for proper wash rinse sanitize steps. This will need to be corrected. Ensure that a permit for plumbing work has been applied for at the City of Cedar Falls.

Observation: Remembers book provided last inspection. Employee health reporting agreement needs to be implemented.
- In-use utensils, between-use storage
Observation: Ice scoop is stored on top of the ice machine. Top of machine is not sanitary.
- Certified Food Protection Manager with management and supervisory responsibility employed by the establishment
Observation:Owner has not had food safety certification. Brochure for Dec 1 class provided. Need at least one person of supervisory duties certified.

Observation: Asterisks are missing from burger items on menu.
- Storage and maintenance of wet and dry wiping cloths
Observation: Wiping cloths on counter upon arrival. Corrected on site.

Observation:Move valid license to a location within the public's view.
- Posting inspection reports
Observation:Post the inspection report in the public's view. This can be corrected today.
