Observation: bosco sticks in box sitting directly on walkin floor should be elevated at least 6 inches.

Observation: a few cleaning issues observed today: kitchen fan needs cleaning, back dry storage room needs cleaning, floor area in back of kitchen (under soda boxes, under ice machine, under shelves) needs cleaning

Observation: clean equipment and utensils stored in back room are very dirty as this area is very dusty and dirty

Observation: can opener had chunk of dried food on blade. Should be cleaned after each use and washed, rinsed and sanitized at least daily

Observation: roller grill items on front of unit Tornados were 124.3 deg using my digital stem thermometer. Dial turned up to 6 1/2 and rechecked. Corrected.
