Observation: Food employee touch fruit garnish and placed on beverage. Discussion with employee about other methods to garnish drinks without bare hand contact with garnishes.

Observation: Cutting boards throughout kitchen and on make-top refrigeration units were worn and discolored.

Observation: Sauce containers, container where sauce containers were stored, and plastic container stored on clean utensil rack. Pizza cutter stored on magnetic strip next to walk-in-cooler area had food residue. Person in charge removed all items to be cleaned and sanitized in the dish room.

Observation: Open beverage on prep table next to the walk-in-cooler. Person in charge removed beverage to be voluntarily discarded.

Observation: Establishment did not have a test kit available to test the quat sanitizer for automated dispensed sanitizer near mop sink. Establishment did not have a chlorine test kit at dish machine in kitchen

Observation: Food product stored on ground of walk-in-freezer in boxes.

- Food storage containers identified with common name of food
Observation: Working container of sugar was not labelled. Container was labelled at time of inspection.
- Frozen PHF/TCS foods are properly slacked and thawed
Observation:Frozen raw chicken was being thawed by use of water. Inspector observed the packaged chicken sitting in non-running water. Person-in-Charge noted that he was in the process of dumping the water and taking the chicken to the walk-in, which he did after explaining his procedure.
- Using a handwashing sink- operation and maintenance
Observation: A box of bottles was placed on top of the hand wash sink in the bar area. As well ice was found in both hand wash sinks in the prep area. The bottles and ice were removed at time of inspection. Hand wash sink drain near ice machine is leaking.
- Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days
Observation: Mac and Cheese had a date outside of the 7 day window. Product was voluntarily thrown away during the inspection.
