- Adequate ventilation
Failure to provide adequate ventilation to minimize odors and vapors in areas where they may contaminate food. Specifically, I observed that there conditions of filth on/inside the floor air filter unit. The interior surfaces of this unit has excess residue of dust, pet like hair, and wax. The applicant stated that they would be willing to remove and replace the existing unit with a new unit.
- Hand drying
Lack of a sanitary towel service or suitable hand drying devices. Specifically, I observed that there were no disposable hand drying towels in the proposed employee restroom. The only hand drying options that were provided were cloth bath towels.
- Lack of effective pest exclusion
Effective measures are not being taken to exclude pests from the processing areas. Specifically, I observed in excess of twelve house flies in the kitchen processing area.

- Storage requirements
Failure to properly store toxic compounds in a manner that protects against contamination of food. Specifically, a bottle of animal medication was stored in the refrigerator with other foods and food ingredients.
- Failure to wear
Failure to wear hair restraints where appropriate. Specifically, the individual working in the kitchen area processing jam and herbal tea was not wearing a hair restraint.
- Non-food-contact surfaces (S)
Failure to clean non-food-contact surfaces of equipment as frequently as necessary to protect against contamination. Specifically, animal like hairs were observed on lids of ingredient storage containers (red coffee containers).
- Convey sewage
Plumbing is not adequately installed and maintained to properly convey sewage and liquid disposable waste from the plant. Specifically, the hand washing sink drain line was leaking.
- Buildings/sanitary
Failure to maintain buildings, fixtures, or other physical facilities in a sanitary condition. Specifically, upon entering the premises there was a very strong odor of cat urine. Cat like hair was also observed on floor surfaces in the food processing area and between floor and equipment surfaces in the food processing area.
- Suitable temp. and pressure
Failure to provide running water at a suitable temperature or under suitable pressure for cleaning of equipment, utensils and food-packaging materials. Specifically, there is no cold water plumbed to the large single warewashing sink faucet. There is very low water pressure at the double sink warewashing sink faucet.
- Insecticides/rodenticides
Use of insecticides without observing necessary precautions and restrictions to protect against contamination of food, food-contact surfaces, and/or food-packaging materials. Specifically, the firm disclosed that Ortho Home Defense pesticide is sometimes applied to surfaces within the food processing area. The firm disclosed that food contact surfaces and other equipment/utensils may not be covered when applications are made. The manufacturer's instructions state that food contact surfaces and equipment must be covered prior to application.
- Sewage disposal
Failure to dispose of sewage into an adequate sewerage system or by other adequate means. Specifically, the drain line to the large single compartment warewashing sink is not connected to the sewage drain line. Waste water drains into a bucket that is positioned beneath the sink.
- Materials and workmanship
The workmanship of utensils does not allow proper cleaning and/or maintenance. Specifically, single use food containers are being re-used for storage of food ingredients (plastic coffee containers and snack food containers). Additionally, a grocery sack was observed to be used as a liner for raspberry leafs which were being stored in a metal popcorn tin. The grocery sack can not be adequately cleaned and/or sanitized.
- Fans/air blowing equipment
Failure to operate fans and other air-blowing equipment in a manner that minimizes the potential for contaminating food, food-contact surfaces, & food-packaging materials. Specifically, the vent and filters of the window air conditioning unit were soiled with pet hair. The window A/C unit was running at the time of the inspection and blows directly into the manufacturing kitchen area where exposed foods, clean equipment, and packaging materials are handled and/or stored. Additionally, a box type fan stored in the processing area was also observed to be soiled with pet hair. This fan was not in use at the time of inspection.
