Observation: Observed two items sitting on stove while stove was not on -- tomato sauce was 127-131*F -- sauce was moved to walk-in cooler. Soup on stove was still above 135*F.

Observation: store room floor not clean
- Food storage - preventing contamination from the premises
Observation: boxes of foods stored directly on floor in walk-in freezer
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observation: numerous foods in walk-in cooler and reach-in cooler not dated
