Observation:Verify data plate for dishwasher, unable to find at the time of visit. This should be on the machine.

Observation:Dicer taken out of service today. Pieces are missing from the press. Do not use until repaired.
- Cleaning frequency of food contact surfaces (PHF/TCS)
Observation:Ice machine large amount of blackened growth and some pink growth. Large amount of lime build up. Baffles have darkened growth. Easy access areas have soiling and build up. Ice machine must be taken out of service at this time. Do not use until thoroughly cleaned and sanitized.

Observation:Cutting boards are no longer smooth and easily cleanable.

Observation:Ice machine needs to be cleaned. Some darkened build up noted.

Observation:Test strips are needed for sanitizer

Throughly clean ice machine, filter cover and inside catch panel. (internal components at least quarterly), dirty cutting boards were stored away
- Plumbing system repaired according to law
Hansinks in kitchen water needs to provide adequate flow and temperature needs to be available quickly and the flow needs to continue for a full 15 seconds.
