    Observation:Observed cheese sticks in crock on top of tray on top of chill plate - cheese stick was 57 degrees at lower end, 63 degrees at upper end. New cheese sticks were changed to a metal container that allows cold transfer, discussed monitoring holding temperatures. Corrected on site.

  • Handwashing signage
    Observation:Employee unisex restroom and men's restroom in locker room did not have handwashing signs, corrected on site.
  • Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
    Observation:Parts of meat slicer that are not in contact with food had visible food particles - has not been in use since spring.
  • Equipment location, installation, repair, and adjustment
    Observation:Observed large ice blocks on condenser lines in walk-in freezer and cooler, ice observed in seams of wall panels, observed wall panels bowing out and creating gaps which can allow air to pass into the units.
