Observation: Bacon (53F) and fries (55F) were not being hot held at correct temperature. Person in Charge discarded both bacon and fries.

Observation: Employees could not complete proper handwashing procedure due to the absence of warm water (water was at 53F).

Observation: Faucet at three compartment sink runs continuously and can not be turned off at faucet handles. Water running from uncapped water lines under the ceiling access ladder is draining onto the floor and held in place by a spice container. No hot water under pressure available in establishment. Per employee water heater has been disrepair for months. Due to no hot water in establishment person in charge voluntarily ceased operation of establishment until hot water is restored.

Observation: Tide powder bleach laundry detergent stored on rack above drain board at manual warewashing station. Person in Charge moved Tide box to a location away from food, equipment, and utensils.

Observation: Person in kitchen area showed signs of sneezing and runny nose. Person then stated the presence of a sinus infection.

Observation: Wet wiping cloths were not stored in sanitizer bucket. Wet wiping clothes stored in piles all around facility.

Observation: Person in Charge was not able to demonstrate knowledge of proper cooking temperature for beef burgers, turkey burgers, and bacon. Person in Charge also did not know required hot holding temperature. Establishment had no hot water available at any sink while food was being prepared and served.
