REPEAT VIOLATION - Macaroni and cheese sauce not cooled. Product is labeled 11/11 and is at 48.9*F in the cold hold unit. A risk control plan has been written for cooling the macaroni and cheese.

REPEAT VIOLATION - pasta in the cold hold unit on the line is above 41*F. The product that was measured was 43*F - 44.5*F.

Pasta in prep table is above 41*F. Pasta was moved back to the walk-in cooler.

Pasta, cheese sauce and mushrooms not cooled properly. Cheese sauce and mushrooms were voluntarily discarded. Pasta was removed from the walk in and placed in an ice bath until the product reached 41*f.
