Observation:Two containers of alfredo (3/17) and one container of marinara (3/18) were past shelf life. All containers discarded.

Observation: Raw shrimp and ground beef were observed above ready to eat food in line cooler and True 3 door stand up (dry storage).

Observation: Dented cans of pizza sauce. Cans were not going to be used due to taste. Cans will be discarded and rest will be donated.

Observation: Using steam table to reheat food on line. Must use another piece of equipment designed for reheating to reach 165*F in 2 hours.

Observation: True 3 door cooler (dry storage) has torn door gaskets (left door).

Observation: Was not re-dating items after pulled out of freezer. Must re-date frozen items when removed from freezer. Also date mark missing on ready to eat items (lunch meat, sauces, etc.)
