Ambient of reach in make table cooler was 44.3F at 10:45 AM. Owner had turned unit off when he got in this morning. When inspector arrived, unit was turned on. Owner said they will not use it until it's been serviced and they will monitor food temperatures.
  • KDA_4_60211E4 - --The ice chute at the soda fountain, has a small amount of brown and red mold on the exterior of the chute.
  • KDA_4_90411A - --The single serve forks, knives and spoons, were stored in gray round containers with the food contact surface up.
  • KDA_6_50111 - --To the right of the stove in the basement, there is peeling paint. There are holes in the walls in various places in the basement. There is missing floor tiles trough out the basement.
  • KDA_Defacto - --The reach in make table ambient was 44.3F. Items in the top make table cooler are in pans of ice, shredded lettuce 40.3F. Two door stainless steel reach in, ambient 36.5F. Reach in cooler in the basement, milk 35.2F. In the basement, Two door reach in ambient was 45.7. There wern't any potential hazard food in the reach in. The make table reach in cooler, was turned off by the owner when he arrived this morning. When inspector came, it was turned on and ambient at 10:45 AM was 44.3F. Owner said they will not use it until it's been serviced and they will monitor food temperatures.

  • KDA_3_30211A1b - --In the reach in cooler in the basement, there was a plastic food storage bag of uncooked ground beef sitting in a plastic container with a plastic food bag of ready to eat ham, without a separation. COS-ready to eat ham was placed in the door of the unit.
  • KDA_3_30412B - --In the pie making area, there was a scoop with a handle touching the food in the sugar container and in the cinnamon sugar mixture. COS-scoops were removed.
  • KDA_3_50116A2 - --The make table reach in cooler, about a 1/4 head of cabbage in a thank you bag 50.8F, individually wrapped corn dogs 48.3F, 47.9F. Employee said these items had been in there since 10:00 AM. Hot dogs 47.5F, commercially prepared sliced and cooked potatoes. Employee said these items had been in there since around 10:45 AM. Make table top cooler, shredded lettuce 48.6F, container of sliced tomatoes 50.4F, 47.9F, commercially precooked chicken breast 45.8F. Employee said items had been in make table since 10:00 AM. COS(corrected on site)-all items were discarded, except hot dogs and sliced potatoes. These items were placed in reach in freezer and cooled to: hot dogs 36.2FF and potatoes 38.3F. Ambient of make table reach in cooler at 4:45PM was 52.9F. This is the only cooling unit in the grill/cooking area. The other cooling units are in the basement.

  • KDA_4_60211E4 - --The ice chute at the soda fountain, has a small amount of brown and red mold.
  • KDA_4_90311B - --Above the two compartment sink, there were seven drinking glasses that were stacked wet. COS-items were placed at two compartment sink.
  • KDA_4_90411A - --Under the preparation counter in the kitchen, a gray container with single serve knives, forks and spoons were placed so the lip contact area would be touched.
  • KDA_5_20212A - --The hand washing sink was at 73.3F. COS-Employee went and turned up the temperature on the hot water heater. At 3:00 PM the hand washing sink was at 99.8F.
  • KDA_5_40213 - --In the basement, there is a floor drain by the employee restroom and in the single serve storage room. The floor drains are backing up into the basement. There is water in the only employee restroom and on the floor of the single serve storage room. When the mechanical ware washing machine was ran, water and soap suds were coming up out of the floor drain into the single serve storage room. Person in charge said owners father is coming with auger.

  • KDA_6_50112A - --There is dried on food debris and mold on various walls through out establishment.
  • KDA_8_40411 - --There is only one cooling unit in the cooking/grill area. The other cooling units are in the basement. There are two floor drains in the basement that are backing up and water on the floor. The employee restroom is in the basement and has water from the floor drain in it. When the mechanical ware washing machine was ran, water and soap suds were coming up out of floor drain.

  • KDA_3_30212 - --The following items were with out common name. Under the three compartment sink, a spray bottle with a clear liquid. Employee said it was vinegar and water. In the basement, on the south wall on the bottom shelf, was a five gallon bucket of red powder, person in charge said it was chili seasoning. In the pie making area, there was a clear container with a brownish white powder, employee said it was cinnamon and sugar, a five gallon container had a white powder in it, person in charge said it was sugar, In a green rubbermaid container, a brown powder. Employee said it was spice for pies. COS-all items were labeled.
  • KDA_3_30412B - --In the pie making area, a scoop handle was in a container of cinnamon and sugar with the handle touching the food, there was a scoop handle in the pie spice with the handle touching the food. COS-scoops were removed.
  • KDA_3_50116A2 - --In the make table cooler, a cooked chicken patty 43.8F, sliced tomato 44.1F. In the make table reach in cooler, sliced tomato 46.7F, made on site tarter sauce 47.8F, cooked sliced potatoe 44.8F, made on site tarter sauce 44.3F, hot dogs 43.7F. Employee said all items had been in there since last night. Person in charge said, they had a problem with unit freezing up so temperature was turned up. COS-all items were discarded and temperature was turned down. Ambient of the reach in make table was 47.8F. Ambient of the reach in make table in the cooking area was 36.5F at 1:45PM.
  • KDA_4_10111A - --In the pie making area, a non food grade safe green rubber maid container held pie spice. In the basement located on the south wall shelves, a five gallon non food grade safe container was holding chili seasoning. COS-items were placed in food grade safe containers.
  • KDA_4_20211A2 - --In the basement on the shelf against the south wall, two containers were pitted in the inside where food would come in contact. COS-items were removed from service.
  • KDA_4_204112B - --The reach in make table cooler, did not have a thermometer.
  • KDA_4_30111 - --The reach in make table in the grill area, was not holding food items to 41F. Person in charge said it was freezing food items, so they turned temperature up. COS-food items were voluntarily discarded and temperature was turned down. Ambient at 1:45 PM was 36.5F .
  • KDA_4_60111C - --The vent hood over the grill has an accumulation of dried on food and grease. The inside of Blodgett and both Frigidaire's reach in coolers in the basement have an accumulation of food and dried on food. The front of the oven used to bake pies have an accumulation of dried on food. Person in charge said, it gets cleaned every couple of weeks, they can't keep it clean.

  • KDA_6_50112A - --There is dust and cobwebs hanging from pipes above the stove in the basement. There is dried on food debris and mold on various walls through out establishment. Under the drive through window that is not in use, there is trash and debris.
  • KDA_7_10211 - --The following were with out a common name: Down stairs under the two compartment sink, there was a spray bottle with a green liquid in it, person in charge said it was Pine-sol. Under the three compartment sink, a spray bottle with pink liquid. Employee said it was degreaser. COS-all items were labeled.
  • KDA_7_20111A - --On a shelf under the coffee pots, there was a spray bottle of clorox and a spray bottle of glass cleaner that had no separation between them and a container storing open single serve lids. COS-chemicals were moved under the three compartment sink.
  • KDA_Defacto - --Frozen food is frozen. --hamburger patty cooking on the grill, 206.2F. --In the reach in make table in the cooking area, corn dogs 42.1F. Ice cream mixture 40.3F. In the drawer under the grill, sliced cheese 38.4F. In the reach in make table cooler on the soda fountain side, milk 35.6F. In the basement Frigidaire, tarter sauce 36.8F. --On the stove top down stairs, chili 174.1F.
