Facility does have time as a control procedures but according to employee and manager they do not apply them to breakfast food items.

  • KDA_4_20311 - --In kitchen, ice water calibration check of 2 digital thermometers used in facility showed thermometers at 38.6, and 37.7 against inspection thermometer calibrated 12/9/2015 of 32.4. COS-Manager chose to open a new digital thermometer and checked calibration at 32.2 to correct.
  • KDA_4_60111A - --In kitchen, at clean dish storage rack, onion slicer stored as clean with stuck on onion on blade. COS-Manager moved blade to ware washing sink for re-cleaning. In kitchen, at clean dish rack, dicer stored as clean with food stuck on blades. COS-Manager moved dicer to dish area for cleaning.
