- KDA_2_30114H - --In the deli, Employee sliced meat and cheese and then used the scales. Employee then, took off gloves and used both hands to push through the doors to go to the back room. Employee then came back out and put on gloves and touched the cheese block in a plastic bag. Educated employee on proper hand washing. COS-Employee removed gloves and washed hands. Plastic bag was replaced on cheese.
- KDA_3_50118A1 - --In the deli case, there was opened PS Pastrami that had a discard date mark of 8/24/15. opened PS maple cured Turkey breast had a date mark of 8/25/15. COS-Employee voluntarily discarded. This was less then 10% of date marking items.
- KDA_4_60111A - --The meat slicer on the west side, has an accumulation of dried on food debris. The black piece on the handle that holds the meat to slice, has old dried on food debris. Employee said, it is not removed to clean. They clean in place and spray sanitize. The underneath side that holds the blade, has an accumulation of dried on food debris. Employee said, they do take the blade to the three compartment sink for washing, rinsing and sanitizing. Educated employee on all removable parts needing to be taken to three compartment sink. Employee said slicer on the east side was just repaired and brought back yesterday.
- KDA_4_60211A2 - --In the cheese deli case the following foods were found with dried on meats on all four sides of their surfaces. PS mild cheddar loaf, dated Monday 9/14/15, Colby cheese dated 9/12/15 and white American cheese 9/12/15. You can see the marks on the white American where it has been held against the handle of the slicer. They slice rare angus roast beef on the slicer. Employee said, they sometimes don't clean in between slicing meats and cheese. Educated on cross contamination of the raw roast beef. COS-Employee voluntarily cut off all sides of the cheese and placed in new plastic bags.
