3-302.11(A)(2) - --Several containers of raw chicken were on a WIC wire storage shelf located above raw squid in water container and boxed raw beef - COS by moving all raw chicken containers so as to be below other raw meats species.
KDA_3_30211A1a - --A box of cartoned shell eggs were on the WIC wire shelf over a box of raw squash - no breakage or leakage of raw eggs - COS by moving eggs to the bottom shelf in the WIC.
KDA_3_30511A1 - --A bag of sugar was on the floor in the back dry storage room - COS as manager placed it off the floor.
KDA_Defacto - --166.8 F on hot water dish wash machine. --207 F white rice in warmer Steam table: 175 F brown gravy --78.2 F on cooked cabbage and pork mixture out from mixing to be used in egg rolls. Batter just made at 70.4 F to be used in coating and deep fat fryer. Dozen raw eggs at 53 F to be broke and used in fried rice at wok. Sprouts from WIC out at 63 F to be used in wok. WIC: Ambient 41 F 42.9 F container of RTE pork 43 F sprouts 39.1 F soup 39.8 F container of raw diced chicken All freezers with foods frozen solid. --The kitchen make table and the wait staff RIC are not working, and at the time of this inspection were not being used to cold hold PHF/TCS foods.
