KDA_3_10111 - --Sliced turkey in sandwich make table with unknown prep date. corrected on site, sliced turkey was discarded.
KDA_Defacto - --Due to the complaint, the facility now dates containers on the sandwich make table with a "flip" date. Per person in charge, this flip date is the day the containers are exchanged out, not the prep date of the product within. The intent is that the product is checked for quality daily. Containers of ham and salami were also marked with the flip date, and were opened the previous day which was also the flip date. Proper date marking procedures for the potentially hazardous foods in the sandwich make table was reviewed.
