KDA_3_30414B1 - --There was a wet wiping cloth on the make table used for cleaning the food contact surface. The wiping cloth was not stored in a chemical solution.
KDA_3_50115A - --There was a large pot of cooked grape leaves cooling at room temperature in the kitchen. COS- PIC placed leaves in shallow pans and placed into the reach in freezer for immediate and rapid cooling.
KDA_4_60111C - --There is dust accumulation on the venting tube of the carbonators at the front for the soda unit.
KDA_4_60211E4 - --There is mold build up along the inside surface of the bulk ice unit in the back.

PIC stated items were prepared today 1.26.16 and are used within 24 hours. --tomato soup 162 (steam table) --Variance approved and on file for the use of a single restroom by public located through the main kitchen.

KDA_3_30212 - Food storage containers (Common Name) Except for containers holding FOOD that can be readily and unmistakably recognized such as dry pasta, working containers holding FOOD or FOOD ingredients that are removed from their original packages for use in the FOOD ESTABLISHMENT, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be identified with the common name of the FOOD.
