Employee said these items had been in and out of reach in during lunch hour. Educated on keeping smaller portions on ice or smaller portions in smaller Ziploc bags.COS-left in cooler to cool down. Ambient of the coke reach in was 37.2F. They moved the unit so the doors are not facing the grill.

Employee said it was made Sunday. Made on site carnitas were without date markings. Employee said they were made on Sunday. COS-Employee dated items correctly.

  • KDA_3_10111 - --In the stainless steel reach in, there was one unopened head of lettuce that had yellowish liquid on it. COS-lettuce was voluntarily discarded.
  • KDA_3_30212 - --In the kitchen, there were two containers without a common name. Person in charge said it was chili powder. At the front counter, there were two squeeze bottles with out a common name. Person in charge said they were prune concentrate. COS-employee labeled.
  • KDA_3_30414B1 - --Person in charge said, they were only using soap and water for cleaning soiled tables. COS-Will start using sanitizing solution in a bucket.
  • KDA_3_30512 - --In the stainless steel reach in, there was a head of lettuce stored in a pan of water. The water was from a leak in the unit. COS-Person in charge discarded the lettuce.
  • KDA_3_50116A2 - --In the kitchen coke reach in the following items had been in the cooler for longer than 4 hours. Person in charge did not know how long items had been above 41F. Raw cut cabbage 44.5F, made on site rice 44.8F, made on site refried beans 44.3F, made on site red sauce 51.4F, made on site green sauce 50.1F, made on site salsa 47.1F, sour cream 44.1F, chicken pupuas 47.5F,47.9F,44.1F, hot dogs: 45F, 45F, 45.4F, 45.9F,46.8F,43.3F, sliced ham lunch meat 45.8F, cooked on site, partially cooked chopped beef 46.8F, cooked on site stomach 43.9F, shredded cabbage and carrots in vinegar 48.8F, 46.1F, mozzarella cheese 47.9F, 47.4F, cream 46.3F,45.2F. The ambient of the coke reach in was 41F. Person in charge said they are not using a make table to keep items out. They are constantly getting into the make table to prepare food as it is ordered. COS- These items were voluntarily discarded.

  • KDA_Defacto - --Frozen food is frozen. --In the coke reach in: shredded lettuce 42.6F, cooked on site chopped chicken 43F,42F and opened sliced ham lunch meat 42.6F. (Allowing 2 degree variance). The ambient of the coke reach in was 41F. They were removed to stainless steel reach in. Ambient of stainless steel was 40.3F --Person in charge said they are not hot holding. They are warming everything up on the grill as it is ordered. --The coke reach in cooler was locate on the west wall when they opened. They move it to be more convenient, they will move it back. --They are doing a great job with date marking.
