- KDA_3_50115A - --In the back store room two containers of cooked sausage links, cooked 1.5 hours previously per the employee, were cooling on the counter without any temperature control and with plastic wrap covering the products. The product had a measured internal temperature of 91.4F. COS: At inspector's direction products were transferred to a sheet pan and placed in the freezer to rapidly cool. At 2 hours post cooking the product had a measured temperature of 50.5F
- KDA_3_50116A1 - --Previously raw, cooked sausage patties were stored in a container out on the counter and not under any temperature or time control at 92.4F. Per the employee the products were cooked 5 hours previously. COS: Discarded.
- KDA_3_50116A2 - --In the reach-in cooler across from the grill area diced, cooked ham was held at a measured internal temperature of 48.0F, sliced, cooked ham at 46.4F, raw hamburger patties at 46.5F. Per the PIC the products had been stored for less than 4 hours. Per the PIC a repair technician had been in prior to the inspector and identified a Freon leak and low Freon levels. The measured ambient air temperature in the unit was 48.7F. COS: All TCS products were moved to alternate properly operating refrigeration.
- KDA_3_50118A1 - --In the front RIC cooked, de-shelled boiled eggs are stored with a prep date of 9/16(verified by the PIC). Product is held for 9 days. COS: Discarded.
- KDA_3_50118A2 - --In a RIC in the back storage room cooked sausage crumbles and cooked chicken pot pie filling, cooked on site on 9/21 per the PIC, are not dated. COS: Date marking provided.
- KDA_4_30111 - --The reach in cooler across from the grill is not holding Temperature Control for Safety (TCS) foods at 41F or below. The ambient air temperature in the unit was 48.7F
- KDA_4_60211E4 - --The bulk ice machine had suspect pink slime mold build up on the internal plastic baffle directly above the surface of the ice.
- KDA_5_20511B - --The hand sink at the wait station had a pitcher of water stored in the basin of the sink. COS: The pitcher was removed and education provided.
- KDA_5_20515B - --Behind the mechanical dish machine a water supply pipe emanating from the wall is cut off with severe corrosion and scale build up at the end of the pipe. Liquid is slowly leaking from the corroded end.
- KDA_6_501112 - --In the back storage room there were 3 dead roaches under the coolers and one roach egg sack.
