KDA_3_50116A2 - --There were approximately 10 prepped salads (in bowls) on a tray on top of the make table that measured at 47F. PIC stated the salads were prepped approximately 1 hour prior. COS- PIC moved the tray to the cooler for rapid cooling.
KDA_3_50118A1 - --3-501.17(A)- There was a container of sliced salami (done on site) in the center reach in cooler that was date marked 8/12. PIC stated that 8/12 was the prep and freeze date and that the salami was pulled from the freezer on Monday 8/24. COS- PIC correctly date marked. Educated PIC on proper date marking.
KDA_3_50118A2 - --There was an opened container of precooked lasagna in the center reach in cooler without any date marking. PIC stated the lasagna was opened and placed in the cooler on Monday 8/24. COS- PIC correctly date marked. There were three opened gallon of milk (chocolate, whole, lowfat) in the glass reach in cooler on the line without any date marking. PIC stated all three were opened on Monday 8/24. COS- PIC correctly date marked. There were three containers of cooked and shredded chicken and 2 containers of sliced turkey in the outdoor walk in cooler without any date marking. PIC stated both items were prepped at open yesterday 8/26 (11AM). COS- PIC correctly date marked.
KDA_4_60111A - --There were approximately 10-15 food storage containers on both clean utensil racks with old date sticker residue along the sides. The pans were all stacked together. COS- PIC moved all pans to the warewashing area for additional cleaning. There were approximately 5-10 food storage containers and 5-10 food storage lids on the clean utensil racks with old dried food along the food contact surfaces. COS- PIC moved all dishes back to the warewashing area for additional cleaning.
KDA_7_10211 - --There was a working spray bottle of clear liquid on the counter by the bar without any common name listed on the label. PIC identified the product as sanitizer. COS- PIC correctly labeled.
KDA_7_20111A - --There was a working spray bottle of sanitizer stored on the wire rack shelf in the bar directly next to several bottles of Patron liquor and clean glasses. The spray nozzle was facing the liquor bottles and glasses. COS- PIC moved the chemical to a different area.
KDA_7_20111B - --There was a aerosol spray can of stainless steel cleaner on the wire rack in the bar area directly above clean glasses. COS- PIC moved the chemicals to a different area.
