  • KDA_4_90311B - --There were approximately 20 clean plates stored on the shelf above the make table with the food contact surfaces faced upwards and not in an inverted position.
  • KDA_6_50111 - --There are several cracked and broken floor tiles under the grill and fryers in the kitchen.
  • KDA_6_50112A - --There is grease and old food debris build up in the one inch gap behind the fryers and grill in the kitchen.
  • KDA_7_10211 - --There was a working spray bottle of yellow liquid in the chemical storage area above the warewashing unit without a common name listed on the label. PIC was unable to identify the product. COS- PIC voluntarily discarded.
  • KDA_7_20111A - --There were two containers of Windex stored directly next to a sleeve of single service hinge lid containers on a shelf in the back storage area. COS- PIC moved the chemicals to a different area.
  • KDA_Defacto - --cheese 41 (reach in cooler 1) raw chicken 38 (reach in cooler 3) sliced turkey 40 (make table) corned beef 40 (reach in cooler) --Chlorine measured at 50ppm in the dishmachine, Chlorine test strips provided. --There is a pest control company contracted, no paperwork provided. No activity. --There were containers of sliced turkey, sliced ham and sliced corned beef in the make table without any date marking. PIC stated all packages were opened last night at approximately 9PM. Discussed date marking procedures.
