KDA_3_30211A1b - --Packages of raw beef were touching packages of cooked chicken in the walk in cooler. COS, raw beef removed. KDA_3_50116A1 - --Cooked beef 124F was in the hot box. PIC stated the beef had been in the hot box for 1 hours. COS, cooked beef reheated to 165F. KDA_4_20211A2 - --Red sauce was stored in a plastic food storage container with a cracked plastic lid in the walk in cooler. KDA_4_60111A - --Dried food and old date marking stickers were on plastic food storage containers. House flies and drain flies were resting and nesting on food storage containers, cutting boards, and utensils that were stored as clean. COS, all food storage containers, equipment, and utensils to clean and sanitized. KDA_4_60111B - --Cooking pots and pans were encrusted with grease deposits. KDA_6_30112 - --No paper towels were at the handsink in the food prep area. COS, paper towels were provided. KDA_6_501111A - --100 plus house flies, and 100 plus drain flies were in the food prep area. Files were resting on food contact surfaces, food storage containers, and utensils that were stored as clean. Flies were on the ceiling, and in the dry good storage area. 20 plus flies were in the bar area on food contact equipment and utensils.
