In the RIC, a container of shredded cheese was soiled with sticker residue. Corrected on site (COS): Person in charge (PIC) returned containers to St. Joe's for additional cleaning. KDA_5_20313A - --There is no service sink or similar facilities for disposing of mop water and other liquid wastes. PIC said they use a pitcher of water with a small amount of floor cleaner, then use a dry mop head to mop the kitchen. The mop head is allowed to air dry, then discarded. Per PIC, the mop is changed each time it is used. KDA_5_20511B - --Soiled dishes were soaking in soap and water. PIC said some dishes are cleaned on site. COS: Educated KDA_7_20111A - --Sanitizing wipes were stored in direct contact with boxes of chips and crackers. COS: Wipes moved to an appropriate location. KDA_7_20111B - --Sanitizing wipes were stored directly on top of a container of rolls. COS: Wipes moved to an appropriate location. KDA_8_30411A - --Food establishment license is not posted where it can be viewed by customers. KDA_Defacto - --All potentially hazardous foods in freezers are frozen. --At beginning of inspection, gravy was cooling in RIC in covered metal container, at 157.6F. PIC said she had removed the gravy from heat approximately ten minutes prior. Educated on using ice bath, leaving container uncovered, and stirring food to assist cooling. PIC placed gravy in ice bath. After approximately thirty minutes, gravy had cooled to 109.8. --Facilities does not have warewashing facilities.
