PIC said that the cabbage was cut on 11/13 and COS by date marking. PIC also said that the items are not held for more than 7 days as the facility is closed Tuesday and do not hold over past Tuesday.
KDA_4_20211A2 - --Spatula stacked and stored as clean had cracked and pitted edges. PIC COS by discarding. Two clear plastic food storage containers had cracked corners. PIC COS by discarding.
KDA_4_60111A - --Two clear plastic containers stacked and stored as clean had stickers on the outside surface that were stacked inside other food containers and in contact with food contact surfaces. PIC COS by pulling items to be washed.
KDA_4_90311B - --Plates in several locations in the kitchen were not stored inverted and serving utensils under the preparation table were stored inverted.
KDA_7_20911 - --Several bottles of over the counter drugs were stored above the food preparation table in the kitchen. PIC COS by moving the items.
KDA_Defacto - --Facility provides its own pest control services and uses Zoecon Gentrol EPA Reg.# 432-1460 and Bayer Maxforce FC Magnum EPA Reg.#2724-351. Both are approved for use in food establishments. Bayer Maxforce FC Magnum has restrictions per label and these were discussed with PIC to verify that facility uses within the labeling standards. --Facility uses the RICs and Ice Baths along with portioning foods into metal containers to rapidly cool. --Mechanical Dishwasher CL Sanitizer Solution Concentration tested at 100ppm. --PIC said that most PHFs that are cooked and require date marking are prepared/cooked and frozen. Facility pulls items in smaller portions to thaw and uses or discards any left overs at the end of the day. --Rice Streamers(#1, #2, & #3): Rice 178, 158, 198. --RIF & WIF: Frozen. RIC: Meatloaf 35
