Discussed making sure the packages are date marked when frozen to assure proper date marking for the whole 7 days. Manager date marked the packages to 1/12/2016. --Rice 164.7, pot rice 168.5, 165.4, --This is not cited as a violation: In walk in cooler, [raw fish] was stored above [raw chicken ]. Recommend using the silo method to separate different types of raw animal foods such as beef, fish (including shellfish) lamb, pork, and poultry.
