- Visited the operation today to verify cooler repairs:
- *4.4 Condenser fan was repaired, however, the ambient air temperature was 40°F-43°F. Warm area is the end with the milk.
- Adjust temperature to provide an ambient air temperature of 41°F or below throughout.
- I will return on Wednesday, January 11, to verify cooler temperature.

- *4.4 Observed the ambient air temperature of the walk-in cooler at 41°F-45°F. Also, observed one non-functioning condenser fan. Make necessary repairs in order to provide an ambient air temperature of 41°F throughout. I will return on Monday, 1/9/12, to verify repairs have been made. Relocate potentially hazardous foods (PHFs) if necessary.
- *2.4/5.1 Observed the hand sink (near the 3-compartment sink) blocked with beer. Maintain hand sinks accessible at all times in order to facilitate hand washing.
- *4.5/4.6 Observed the 3-compartment sink blocked with damaged items. Food contact surfaces shall be washed, rinsed, and sanitized and clean to the sight and touch.
- *4.5/4.6 Clean the pop nozzles in order to remove pop residue build-up.
- R/3.5 Provide ingredient information for coffee cake muffins and custard filled donuts in the self-serve pastry case.
- 6.2 Provide Employees Must Wash Hands signs in the men's restroom and at the hand sink next to the cappuccino machines.
- 4.5 The following equipment needs cleaned:
- -dusty fan covers in the beer cave
- -dusty walk-in cooler shelving
- Equipment shall be free of dust, dirt, and debris and be clean to the sight and touch.
- 6.2 Replace the burned out light in the walk-in cooler in order to provide 10 foot-candles of light. Currently 4-8 footcandles.
- 6.1 Provide a light shield for the light bulb above the milk in the walk-in cooler.
- 4.5 Defrost the Ice Cream treat freezer in order to prevent falling ice from possibly contaminating the food.
- NOTE: Observed Slim Jim Tabasco sticks for sale beyond expiration date of 12/03/11. Check and rotate stock.
- NOTE: Discovered that the F'Real sanitizer is iodine.
- Provide an iodine test kit in order to monitor the sanitizer concentration. Maintain iodine at 12.5-25ppm.
- -Observed proper hot holding temperatures throughout.
- -Observed proper raw egg and raw bacon storage on the bottom shelf of the walk-in cooler.
- -1 accurate long stem thermometer available for use.

- Clean these items.
- 6.4 Observed employee jackets stored on food boxes and on a food storage rack. Store employee personal items in a separate designated storage area.
- 6.2 Provide 10 foot candles of light throughout the walk-in cooler. Several lights are not functioning.
