3.4/4.4- Hamburgers on grill line in refrigerated base were between 43°F-42°F. All other foods in the unit were below 41°F. Front waitress cooler holding at 47°F and only food in unit was whipped butter on ice at 47°F. Maintain potentially hazardous foods cold at 41°F and below. Hamburgers and butter were discarded.
6.4- Floor under equipment on grill line has food debris build-up. Clean the floor more thoroughly.
R4.5- The shelf under the flat grill and next to upright freezer has food debris build-up. Clean this equipment.

- the seal on the milk reach-in unit
- the seal on the butter bar reach-in unit
- the seal on the top door of the Victory freezer
- the seal on the walk-in cooler door
Several of the seals are on order. Replace door seals so that equipment is in good condition.
4.5 The following areas are soiled:
R- observed grease accumulation on the sides of the fryers
- observed grease accumulation below the flat grills on the platform
- observed dust and soil accumulation on the bread rack
Clean these items at a frequency to prevent soil/grease accumulation.
