C/*3.2 Observed 2 chocolate topping and 1 waffle cone dip cans with dented seals on the can rack. Store dented canned goods in a separate designated area for return/credit. Do not use canned goods that are dented on the seal in order to prevent possible contamination.

Clean these areas in order to maintain physical facilities clean.
R/6.4 Observed water damaged ceiling tiles. Make any necessary repairs and replace the ceiling tile.
C/6.4 Observed fly swatters stored on a shelf above plastic silverware and hanging on the dipper well of the front freezer. Store pest control devices separate from food and equipment. Use fly swatters in non-food/equipment areas only in order to prevent possible contamination.
C/3.2 Observed a container of waffle powder lacking a label.
Label all unidentifiable substances (white, clear, etc) in order to prevent confusion or misuse.
4.4/3.2 Observed pooling water on the bottom shelf of the reach-in cooler on the cook's line. Make any necessary repairs and maintain foods protected from possible contamination. Ambient air temperature of this unit was properly below 41°F today.
4.5 Observed ice build-up on the handle area and the top shelf of the 2-door upright freezer. Make any necessary repairs and maintain foods protected from possible contamination.
C/4.1 Observed a dead battery on the digital thermometer. Maintain thermometers accurate and in good working order in order to monitor food temperatures. PIC replaced the battery and the thermometer was accurate to 32°F in an ice bath today.
NOTE: Observed a container of coleslaw in the walk-in cooler with an expiration date of 9/3/2011. Check and rotate stock as necessary.
-Take steps necessary to correct repeat violations.
-Observed hamburgers and coney sauce hot holding properly above 135°F.
-PIC reported proper thawing procedures, under refrigeration.

*4.1 Two out of five long stem thermometers were accurate in an ice bath. Discard the innacurate thermometers if they can't be calibrated.
