  • *4.4/4.5/4.6 The cutting board attached to the salad reach-in unit is scored and unable to be washed, rinsed, and sanitized.
  • Replace or resurface the soiled cutting board.
  • 4.4 Air temperature in the salad reach-in unit was 43-45°F, but the food in this unit were holding at 41°F and below. This unit was adjusted by the PIC today.
  • 4.4 Repair the damaged door seals on the salad reach-in unit, cream cheese reach-in unit, and the sandwich reach-in unit to facilitate with temperature maintenance and to provide a cleanable surface.
  • 3.2/4.5 Observed the thermometers were stored in sanitizing solution. Thermometers shall be cleaned prior to use and storage.
  • Sanitizer shall thoroughly air dry on the surface to decrease the bacterial growth.
  • R/6.4 The floor below the dish machine contains pooling water in the grout between the floor tiles and at the floor/wall juncture.
  • Clean this area.
  • R/4.5 Observed ice accumulation in the walk-in freezer on the ceiling and condenser line. Remove the ice. Make any repairs if necessary.
  • 3.2 Label the water bottle with the name of the food to avoid confusion and misuse.
  • 6.2 Repair the non-functioning light fixtures in the rear area, to provide lighting requirements as specified in OAC 3717.
  • 4.5 Repair the soiled caulk at the wall/drain board juncture to facilitate cleaning and to prevent contamination.
  • Note: Operation added two Electrolux Panini machines to the operation.

Five accurate long stem thermometers were available for use.
Observed foods proper thawing under refrigeration during this inspection.
Log was observed, food were properly cooled overnight.
HOLDING: Butter was holding in the self service area at 48°F. Maintain TCS foods at 41°F and below to limit the growth of organisms. Discussed with PIC to limit the amount of butter, and to provide a lid.
PERSONNELL CLEANLINESS: Observed an employee consume a beverage in the dish area from an open container.
Employees shall consume beverages in a from an open container in a separate designated, or from and open container throughout the operation. Discussed w/PIC.
CHEMICAL: Observed an unlabeled sanitizer spray bottle in the rear area. Toxic chemicals shall be properly labeled with the containers contents to avoid confusion and misuse. This bottle was discarded today.
  • 4.5 The door handle on the salad units flip top lid is soiled. Clean this.
  • 6.4 The floor below the dish machine is soiled. Clean this more thoroughly.
  • 4.5 Observed ice accumulation in the walk-in freezer. Remove the ice. Make any repairs if necessary.

  • 4.4 The ambient air temperature in the sandwich unit is 45-46 degrees F. Have the unit serviced in order to hold potentially hazardous foods at 41 degrees F and below. Maintenance was called during this inspection.
