*4.4/4.5/4.6 Observed the 3-compartment sink blocked with construction/remodeling materials. Food contact surfaces (ex: cappuccino mixing bowls, pop nozzles, Alligator Ice dispenser, etc) shall be washed, rinsed, and sanitized.
4.2 Unable to locate sanitizer and a corresponding test kit. Provide an approved sanitizer (ex: chlorine or quat) and the corresponding test kit to monitor the concentration. Maintain quat at 200ppm or chlorine at 50-200ppm. Food contact surfaces shall be washed, rinsed, and sanitized.
R/5.1 Repair the 3-compartment sink spray hose so that it does not fall below the flood rim of the sink.
NOTE: Sandwiches in the cold case are wrapped and labeled at Shue's Marathon across the street. Sandwiches were cold holding properly below 41°F and properly labeled.
