Accurate digital long stem thermometer available for use. Raw beef stored separate from ready-to-eat foods in the walk-in cooler. Chili was properly cooling from previous evening with a rapid cool. Chili was properly reheated on the stovetop to 165°F and above within two hours. Cheese slices are held at room temperature for 8 hours and variance has been approved by the Ohio Department of Health. It is not approved for cheese slices to be returned to the cooler after removed from temperature control. |

Cross contamination shall be prevented by separating raw animal foods from each other and other ready-to-eat foods. Reportedly frosty mix will be moved next to lettuce and tomatoes were relocated.
