--Crab meat was held at 109°F, in steam table, rather than 135°F or above as required. Reheat the crab meat to 165F immediately. Hot hold all food at temperatures of at least 135F. Crab was reheated.

--Refrigeration thermometers could not be located in several refrigerators in this facility. Supply all refrigerators with accurate refrigeration thermometers.

--A cleaning log for the grease trap could not be located. Chef states the grease trap has been cleaned and that they have a log but the log could not be located. Locate the log and post it so that it is available for viewing during inspections.

--The walls in the stairway to the lower level cooking area are not painted. Paint the walls with a quality paint so that they are non-absorbent and easily cleanable.
- Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
--Several ceiling tiles are missing or are not in place due to ongoing construction and repairs. Complete the repairs and reinstall the ceiling tiles.
