--Take-out bowls, plastic cups, plastic bowls, and scoops made out of used plastic bottles were found in use to handle sugar and ready to eat ice. Only scoops with handles may be used to handle foods/ice, in order to minimize hand contact with the food. REMOVE ALL TAKE-OUT BOWLS, OTHER BOWLS, AND “HOME-MADE” SCOOPS FROM FOOD CONTAINERS TODAY AND USE ONLY DEPT-APPROVED SCOOPS WITH HANDLES.

--Interior temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in the following equipment

--Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration for the 3 bay sinks. Obtain quaternary ammonia test strips.

--Excessive ice build up observed in the walk in freezer, 6" above the surface floor. Defrost unit and eliminate all excessive ice build up.

--Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dust, debris, crumb, and splash. 1- Clean and sanitize under the meat rack in the walk in cooler. 2-Clean and sanitize the ice chute.
- Plumbing Facilities in Good Repair, Cross Connection Prohibited, Scheduled Inspections, Cleaning Water Reservoirs (46.825(b)-(e))
--Plumbing system not maintained in good repair - observed the following leaking at time of inspection
- Light Bulb Protective Shielding (46.922(a))
--Lights are not shielded or shatter proof over the ice machine area. Install cylindrical light shield.
- Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
--Wall in the upstairs prep area and in the dry storage area, has a hole, or is broken and in need of repair. 1- Hole in wall under hand washing sink/ install cover or access panel door to comply 2-Electrical face plate missing on light switch.
- Certified Food Manager (CFM)
--The food facility does not employee a CCHD certified food manager as required. An employee has attended an approved training class, but has not applied for CCHD CFM License. Please submit a copy of the serve safe via fax or e-mail, and CCHD will mail a CFM application to the facility. Mr. Capista or Mr. Rizzo will most likely be the next CFM at this facility.
