    Observed pans of crab legs stored directly on the floor in walkin freezer area, rather than 6 inches off of the floor as required.

    Dressings, pasta, rice, chili, beef, chicken, and other potentially hazardous foods were held at 50-55 °F, in the three different cold holding units, rather than 41°F or below as required. All food items out of temperature were discarded.

    Mechanical warewashing equipment observed with build up of filth and residue around the door openings.

    The interiors of two microwave ovens were not clean to sight and touch. Observed old food residue accumulated on the ceilings of these units with the potential to contaminate food.

    The drain line on one soda gun holster at the bar is missing. The soda is dripping directly onto the floor in the corner at the bar, creating a sanitary and pest problem.

    No sign or poster posted at the handwash sink in the mens restroom area to remind food employees to wash their hands.

    Floor drain under the prep sink on the cook line has an accumulation of debris and is not being cleaned frequently.

    An open employee's beverage container was observed in a food preparation area.
  • Preventing Contamination from Food Employees' Hands (46.261)
    A food employee was observed touching ready to eat food with his bare hands at the salad bainemarie prep area. Correct immediately. Peppers were discarded that employee was touching.
  • Preventing Cross-Contamination of Packaged and Unpackaged Food by Separation, Packaging & Segregation (46.281)
    Observed raw shrimp being stored with and above ready to eat cheeses. Observed raw hamburgers and raw chicken being stored directly over cooked ribs. Both observations were made in refrigeration units on the prep line. Correct Immediately.
  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    A container of bbq sauce and a container cherries with a manufactures label requiring refrigeration after opening were being stored on a shelf at room temperature for and unknown period of time and not at 41*F or below as required. Both items were discarded.
  • Ventilation Hood System Adequacy (46.614)
    Observed a small fryer used for frying desserts on a prep table and not under a hood or ventilation system. This violation is a building/fire codes ciolation as well.
  • Food Temperature Measuring Devices Provided (46.632)
    Temperature measuring devices for ensuring proper temperatures of equipment are not available or readily accessible in the bainemarie on the line.
  • Equipment in Good Repair & Proper Adjustment (46.671)
    Observed ice accumulation on the interior of the icecream freezer.
  • Maintaining & Using a Handwashing Facility (46.825(a) & 46.981(h))
    Soap was not available at the handwash sink in the kitchen.
