    --A food employee was observed touching sliced deli meat, a ready to eat food with bare hands. Reviewed requirements to use gloves. Corrected.

    --Observed several hanging ceiling panels in the walk in freezer. The floor of the walk in cooler is uneven and not a smooth easily cleanable surface.

    --Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration.
  • Chemical Sanitization for Mechanical or Manual Warewashing Equipment (46.674(d))
    --Chlorine conc. of the bleach sanitizer in the spray bottle used on the deli meat slicer was greater than 200 ppm. Sanitizer was diluted and requirements were reviewed with the PIC. Corrected.
  • Light Bulb Protective Shielding (46.922(a))
    --Light is not shielded or shatter proof in the walk in cooler above the door.
  • Surface Characteristics of Indoor Areas of Food Facilities (46.901)
    --Floor tiles behind the front deli display area are chipped/broken and is not a smooth easily cleanable surface.
