--Cole slaw on the salad bar was 50F. It was learned that the cole slaw was made this morning. Mayo used is not pre-chilled. Pre-chilling the mayo before mixing with cabbage help ensure product remains at 41F. Once prepared, cole slaw is stored in refrigeration until served. Pre-chill mayo used for all salads. Cole slaw was discarded.

--Dishwasher final rinse temp was 170F. Required temp is a minimum of 180F to ensure dish surface reaches a minimum of 160F. Test strip did not indicate 160F was being reached. Service machine to increase final rinse temp. (Booster heater was on)
