--Hood system is not adequate to remove grease, as evidenced by the heavy collection of grease on the walls, ceilings, fixtures, and baking equipment (noted above). The ventilation hood system is not capable of removing oil-laden vapors from the farthest left deep fryer, as only half of the unit is covered by the overhead canopy. Correct as needed.
- Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
--Following areas are in need of a thorough cleaning: - Along sides, underneath, and wall behind all cooking / baking equipment, in the kitchen area, to remove the heavy buildup of grease and food debris. - Silver two door reach-in freezer to remove the accumulation of food debris on the bottom left of the unit. - Door tracks of the sliding glass door reach-in cooler, in the kitchen area, to remove the accumulation of food residue and debris buildup. - Ceiling tiles surrounding the ventilation hood system are covered in a heavy buildup of grease.
- Maintaining & Using a Handwashing Facility (46.825(a) & 46.981(h))
--Handwash sink in the kitchen was blocked by empty food storage containers stored in the sink basin, and not accessible at all times for employee use. Employee removed the containers at the time of the inspection.
