    --Boxes of granola bar are stored next to the drain under the coke dispenser in the customer service area. Remove these items immediately and store them so these are away from any splashes from the drain. Manager stored them in the dry storage area.
  • Cooling Methods & Food Containers Used/Arranged (46.384(c)(d))
    --Observed a container of chicken breast at 75-77 degrees F internally in the bain marie in the deli area. Observed a container of shredded chicken and chicken breast at 75 degrees F in the walk-in cooler. Chef stated that they were done cooking these items around 10:45 this morning. They were tightly double wrapped with seren wrap. These items were on the bottom shelf of the walk-in cooler by the door. Loosely cover and move them on the top shelf so they can cool faster within 2 hours from 135 degrees F to 70 and from 70 degrees to 41 degrees in additional 4 hours. Manager removed the serene wrap and moved them to the top shelf of the walk-in cooler.
