--Three (3) bulk casings (still sealed) of ground beef thawing at room temperature in a large bus pan on floor, in the back food prep area, which is not an approved thawing method or approved food storage area. Products had an internal temperature of 46-47*F, removed to cold hold storage when instructed.
- Cooling Methods & Food Containers Used/Arranged (46.384(c)(d))
--Four (4) large bus pans of food (one with chicken, three with re-fried beans) cooling at room temperature on the back food prep counter, which is not a proper cooling method. The cooked stated they were prepared / cooked half an hour ago. Product internal temperature of chicken ranged from 103-110*F, and re-fried beans ranged from 160-165*F. An employee removed product to smaller shallow pans in the reach-in cooler during the inspection. Thank you.

--Back entrance / exit door in the kitchen area has a gap range of approximately 1 to 2-1/2 inches and does not protect against the entry of insects, rodents, and other animals.

--Food facility has lost its certified food employee over 3 months ago and has not replaced the certified food employee as required. Posted ServSafe FEC for Cheri Uhls expired 2/23/14.
