--The large white cutting block on the meat table is bolted down with bolts that are malformed, hex sides rounded or otherwise can not be moved. There is easily observable dried food product build up under the edges and can not be easily removed for cleaning and sanitizing.
Cutting Surfaces Maintained (46.672)
--The cutting block on the two door bain marie not being rotated for proper use as indicated by deep knife grooves on only the top with the reverse side showing no usage. The large block on the meat table shows extensive wear and disrepair especially in the pass through to the discard container.
Food Temperature Measuring Devices Calibrated (46.691(b))
--The Taylor metal stem thermometer on the hot side of the service area indicates +44*F in ice water bath after 5 minutes

--Spilled food material on the floor in the walk in cooler. Some oil and grease build up on the floor under the frialator.

--Various utensils (lids for wells) tongs, scoops, whisks, etc., stored in bus tub and Lexan container with easily observable dried food residual in base of both containers.
